Meet the PMG Team: Ockju, Head Distiller

Meet Ockju, the Head Distiller behind Pink Marmalade Gin. Based at Thames Distillers, she spends her days developing recipes, fine-tuning flavours, and working closely with botanicals to create the perfect balance in every batch. From the science of distilling to the magic of that colour-changing moment, Ockju ensures our gin always delivers its signature character. Let’s step behind the still and hear more about her journey.

1.      Introduce yourself, and what is your role at PMG?

Hi, my name is Ockju, and I’m a Head Distiller at Thames Distillers. My main focus is recipe development and distilling. I make sure that Pink Marmalade Gin has the balance and character we want it to have. I spend a lot of time working with botanicals and the still, ensuring every batch has the right flavour. 

2.      What inspired you to join the Pink Marmalade journey—and what’s been your favourite moment so far?

I was drawn into the butterfly pea blossom, which gives that deep blue colour, and the moment you add tonic, it transforms into Pink. We use real pink grapefruit marmalade, which adds a distinctive citrus twist and makes the recipe unique. My favourite moment is always seeing people’s faces light up when they watch it change colour.

3.      What does a “day in the life” look like for you at Pink Marmalade?

Every day is a little different, but it usually starts with checking the still and making sure everything is running smoothly and working with botanicals from all around the world, making sure they are good quality.  And I also work closely with our GC team on flavour consistency and with the blending team on colour changing. It’s very much a team effort.

4.      If you could share a Pink Marmalade G&T with anyone—living or dead—who would it be and why?

I’d choose Paddington Bear. Of course, he doesn’t drink gin, but since he is such a marmalade lover. I think he’d approve of the recipe. I’d have the G&T and he could stick to his marmalade sandwich. And together we can celebrate the Pink Marmalade Gin.
